Travelers on tight time who can only visit one southern city — if choosing between Tainan and Kaohsiung for a single night, Tainan wins on food and history, Kaohsiung on waterfront and nightlife.
Tainan (台南) is Taiwan's oldest city — Dutch colonisers built Fort Zeelandia here in 1624, Koxinga's Chinese loyalist forces defeated them in 1662 and made it his capital, and the Qing took it in 1683. The Japanese moved the capital to Taipei in 1895 but left Tainan's urban fabric largely intact. Today the city holds more than 1,600 registered historic temples and a food culture dense with dishes refined over three centuries: danzai noodles (擔仔麵), milkfish congee (虱目魚粥), coffin bread (棺材板), beef soup from dawn-only stalls, and dozens more.
Tainan is the reason to leave Taipei for more than a day. The food alone justifies the trip: breakfast of milkfish congee and fried egg, lunch of danzai noodles and shrimp rolls, afternoon shaved ice, evening beef soup — all within a few blocks of the train station, all at prices that make Taipei feel expensive. Layered on top is a city that's comfortable to walk: low buildings, old streets with temple forecourts and banyans, colonial history that's visible rather than preserved behind glass.
The correct minimum for Tainan is two nights. The first day is for eating: shrimp rolls for breakfast, danzai noodles for lunch, beef soup from a 5am stall if you can manage it. The second day is for walking: Anping Old Fort in the morning light, the Chihkan Tower courtyard, the Temple of Literature's open-air study halls. Tainan is the city that explains Taiwan better than Taipei does, because Taipei was built to be a capital and Tainan simply grew.

Tainan residents carry genuine civic pride about the city's food superiority over Taipei. The breakfast culture specifically — multiple stalls serving dishes unique to Tainan, open from 5am, changing by season — is unlike anything in the north.
What visitors miss
Most visitors hit the Temple of Literature, Fort Zeelandia, and two or three famous food stalls, then leave. Tainan rewards staying — the food culture requires multiple meals over multiple days to properly explore.
Practical tips
The HSR drops at Tainan HSR Station, 30 minutes from the city centre by shuttle or taxi (NTD 150-200). The TRA (conventional train) drops at Tainan Station in the centre — the slower option but better located.
YouBike (台灣好行) cycling and a free tourist shuttle bus on weekends are the best ways to cover Tainan's spread-out sights. The city is too spread out to walk entirely.
For danzai noodles, the original Dù Xiǎoyuè (度小月) branch near Chihkan Tower is the address. The bowls are small — order two.
